Agnes’ Mocha Velvet Pie Recipe

8 inch baked pie shell

Filling:

1/2 cup butter
3/4 cup sugar
1 ounce unsweetened chocolate, melted
1 teaspoon vanilla
1 1/2 tablespoons instant coffee
2 eggs
1/2 cup cream, for whipping

Prepare 8-inch pastry shell. Cream butter in medium-size bowl and gradually add sugar, creaming well after each addition. Cool melted chocolate; blend into butter-sugar mixture with instant coffee and vanilla. Add eggs, one at a time, beating VERY WELL after each addition. (Use an electric beater or mixer, for you’ll need to beat in each egg 5 minutes to make mixture creamy, thick, and fluffy.) Turn into baked pastry shell; chill 1 – 2 hours. 1/4 c  Packed light brown sugar

1. Preheat oven to 425 F.  Spray a 9-inch deep-dish pie plate with vegetable cooking spray.
2. In a large bowl, combine brown sugar, granulated sugar, flour, lemon zest, cinnamon, and nutmeg.  Mix well.
3. Peel, core, and thinly slice apples.  Add apples to sugar mixture; sti until coated.  Stir in raisins.  Spoon into prepared plate.
4. Place pie-crust on top of filling. Trim edges, pressing against edge of pan.  Using a sharp knife, cut steam vents in pie-crust.  To glaze, lightly brush pie-crust with beaten egg.  Sprinkle with sugar.
5. Bake until pie-crust is golden brown, about 35 to 40 minutes. Place on wire rack and cool for 30 minutes.  Serve warm.

All-American Apple Turnovers

2 tb Unsalted butter
3 lg Apples (ab. 1-1//2 lbs); peeled, cored & cut  3 cups
1/2 c  Apple cider or unsweetened apple juice
2 tb Sugar
2 ts Fresh lemon juice
1 pn Salt
1/4 c  Unsweetened apple butter
2 tb Dried currants (optional)

21 oz cherry pie filling

FOR THE TOPPING

1 cup coconut
1/2 cup almonds, sliced
1/4 cup sugar
1/8 tsp salt (optional)
1/4 cup milk
1 tbsp butter, melted
1/4 tsp almond extract
1 egg, beaten

Directions

Preheat oven to 400F. Roll out pie pastry and place in 9 inch pie
pan. In large bowl, combine pie filling, cinnamon, salt and lemon
juice. Mix lightly. Spoon into crust-lined pie pan. Bake 20 minutes.
Meanwhile, combine all topping ingredients in medium bowl and mix
until blended. Remove pie from oven after 20 minutes, spread topping
evenly over surface, and return pie to oven. Bake an additional 15 to
30 minutes, or until crust and topping are golden brown.

Macadamia Nut Cream Pie Recipe

1 1/3 c Milk
3/4 c Sugar
1/2 c Chopped macadamia nuts
ds Salt
1 ts Vanilla
1 Egg
5 ts Cornstarch
2 Egg whites
1 9 inch baking pie shell
1 c Heavy cream, whipped

In a saucepan, combine 1 cup of the milk, 1/4 cup of the sugar, 1/4 cup of the nuts, the salt and the vanilla; scald. Mix the remaining 1/3 cup milk with egg and cornstarch. Thoroughly stir some of hot mixture into egg mixture; return all to saucepan.

Pie recipe, Lemon Sponge Pie Cook 5 more minutes, stirring constantly, until mixture thickens. Cool 1 hour. Beat egg whites until soft peaks form; fold carefully into cooled mixture. Pour into pie shell; chill. Before serving, top with sweeten whipped cream and remaining 1/4 cup nuts. Makes 8 servings.

This mixture becomes a smooth custard as it is stirred together; it requires no cooking. Cover with a meringue made by beating the 2 egg whites stiff and beating in the sugar gradually. Bake in a slow oven (325ø) for 15 to 20 minutes, or until meringue is delicately browned. Serve cold.

In a mixing bowl combine pumpkin, flour, cinnamon, nutmeg, ginger,
butter, sugar, milk, syrup and eggs; mix well. Pour into the pie shell. Bake at 425 for 15 minutes. Reduce heat to 350 degrees and continue baking for about 45 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Refrigerate. Garnish with whipped cream if desired.
